Spinach Omelette
- 4 lg. eggs, beaten
- Fresh spinach, washed and destemmed
- Mushrooms, sliced
- Yellow onion, diced
- Evaporated milk
- Shredded colby and Monterrey Jack cheese
- Sour cream
- Sea salt and pepper, to taste
- Saute mushrooms and onions until done.
- Add spinach to cook down, about 5 minutes, and set aside.
- Beat eggs with evaporated milk.
- Place in pan and cook eggs until bottom is done.
- Add all veggies and top with cheese, the flip one side of the eggs to cover the fillings.
- Cook about 3 minutes.
- Move to a plate topped with cheese and let the cheese melt.
- Divide into servings and top with sour cream.
