Slow-Cooker Chicken Vesuvio
- 1 lb. (450 g) red new potatoes, quartered
- 1 small onion, cut lengthwise in half, then crosswise into thin slices King Sooper's 1 lb For $0.99 thru 02/09
- 1 red pepper, cut into strips
- 6 cloves garlic, minced
- 8 small boneless skinless chicken thighs (2 lb./900 g) King Sooper's 1 lb For $1.19 thru 02/09
- 1/4 cup flour
- 1/2 cup Kraft Zesty Italian Dressing
- 1/4 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 cup frozen peas
- 1/4 cup chopped fresh parsley
- Place potatoes, onions, peppers and garlic in slow cooker; top with chicken.
- Whisk flour, dressing and lemon juice until blended; pour over ingredients in slow cooker.
- Cover with lid.
- Cook on LOW 7 to 9 hours (or on HIGH 5 to 6 hours).
- Stir in peas; cook, covered, 10 min.
- or until peas are heated through.
- Sprinkle with parsley.
