Thai Noodle Salad Recipe
- 2 tbsp. smooth peanut butter
- 2 tbsp. soy sauce
- 4 teaspoon rice wine
- 1 tbsp. grated fresh ginger
- 2 teaspoon chopped garlic
- 1 teaspoon oriental sesame oil
- 1/2 teaspoon chili oil
- 1/2 c. vegetable or possibly chicken broth
- 2 sliced carrots
- 2 ounce. snow peas
- 12 ounce. Japanese noodles, cooked according to pkg. directions
- Whisk all ingredients except broth in a large bowl.
- Gradually add in broth.
- Steam carrots and snow peas; drain.
- Add in to dressing, then toss.
- Add in noodles.
- Serve salad cool or possibly at room temperature.
- Serves 6.
