Black Bean And Potato Soup Recipe
- 1 x 16 ounce. can black beans liquid removed
- 2 x potatoes peeled and diced
- 1/2 lb cooked ham cut in pcs
- 6 c. beef broth
- 1/4 c. minced onions
- 1 x 4 ounce. can minced jalapeno peppers or possibly mild green chiles
- 1 x clove garlic chopped
- 1 tsp grnd cumin
- 1 tsp grnd oregano
- 1 tsp grnd thyme
- 1/8 tsp grnd cloves Lowfat sour cream and minced tomatoes for garnish
- In Crock-Pot, combine beans, potatoes, ham, broth, onion, peppers, garlic, cumin, oregano, thyme, and cloves.
- Cover and cook on Low 8 to 10 hrs or possibly on High 4 to 5 hrs.
- Serve.
- Garnish bowls with lowfat sour cream and minced tomatoes, if you like.
