Mac-n-Smoked Gouda with Cauliflower

• 1 head of cauliflower, cut into florets, for the broccoli
• Shredded smoked Gouda for the Cheddar
• 1/4 cup (a generous handful) smoked almonds, chopped

1. Prepare as for the master recipe, #4.
2. Sprinkle the finished dish with the smoked almonds.
