Marinated Vermicelli
- 20 g beanstarch vermicelli (cellophane noodle)
- 1/2 cucumber (slice thinly)
- marinade: (mixed in advance)
- *1 Tbsp vinegar
- *1 tsp sugar
- *1 tsp~ soy sauce
- * to taste sesame oil
- Soak cucumber in cold salted (1 tsp) water for 5 minutes.
- Drain and squeeze well.
- Bring the water to a boil, add beanstarch vermicelli and cook according to the directions on the package.
- Cut into bite sized pieces.
- Mix all ingredients and marinate.
