Marinated Vermicelli

  1. Soak cucumber in cold salted (1 tsp) water for 5 minutes.
  2. Drain and squeeze well.
  3. Bring the water to a boil, add beanstarch vermicelli and cook according to the directions on the package.
  4. Cut into bite sized pieces.
  5. Mix all ingredients and marinate.
