Miko's Lotus Root
- 150 g fresh lotus root
- 1 tablespoon olive oil
- 2 teaspoons reduced sodium soy sauce
- 1 tablespoon sugar
- 1 teaspoon sesame oil
- Cut lotus root into thin slices.
- Saute in frying pan with olive oil for a few minutes.
- Be careful not to saute too long, as lotus root tastes best when still a little crunchy.
- Mix in sugar and soy sauce and continue to cook until well incorporated.
- Remove from heat and add sesame oil.
