Diet Pineapple Rice Pudding Recipe
- 2 c. cooked rice
- 2 c. non fat (liquid) lowfat milk
- 4 Large eggs
- 1 c. canned, crushed pineapple (no sugar added)
- 2 teaspoon vanilla extract
- Artificial sweetener = 1/4 c. sugar
- 1 1/4 teaspoon cinnamon
- Combine rice and lowfat milk in a saucepan.
- Simmer 15 min.
- Beat Large eggs and combine with pineapple, vanilla, sweetener and cinnamon.
- Gradually combine with lowfat milk- rice mix.
- Pour into a casserole.
- Bake at 350 degrees for 30 min.
- Divide proportionately.
- Makes 4 servings.
