Hearty Jumbot

  1. Remove the sausage from its casing and crumble into a pan.
  2. Brown the meat and add the onions, red bell peppers, fennel and garlic.
  3. Saute this together for 5 minutes and then add potatoes to the pan along with the cumin.
  4. Cook mixture for another 5 minutes on a low flame.
  5. Add the black beans, corn and spinach and mix well.
  6. Place the mixture in a casserole dish and sprinkle the bread crumbs on top.
  7. Bake @ 350 degrees for 30 minutes.
  8. Serve it with scrabble eggs if desired.
