Pecan Meringue Shell Recipe
- 1 c. crushed pecans
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 2/3 c. granulated sugar
- 1/2 teaspoon vanilla
- Dash of salt
- Combine egg whites, cream of tartar and salt; beat till foamy throughout.
- Add in sugar, a little at a time, beating well after each addition.
- Then continue beating till mix will stand in very stiff peaks.
- Mix in vanilla and pecans.
- Spread on bottom and sides of a lightly greased 8 or possibly 9 inch pie pan.
- Bake in 325 degree oven about 30 min.
