Herbed Squash Casserole Recipe
- 2 pound zucchini or possibly yellow squash
- 1 med. onion, sliced
- 2 carrots, sliced
- 2 tbsp. butter or possibly bacon drippings
- 1/2-1 c. lowfat sour cream
- 1 (10 3/4 ounce.) can cream of chicken soup
- 2 c. Pepperidge Farm herb or possibly cornbread seasoned stuffing
- 1/2-3/4 c. butter, melted
- Salt & pepper to taste
- Following optional: 1 can water chestnuts, sliced Dash Tabasco Dash Worcestershire sauce
