Nadiyas Sweet Potato Pie
- 6 cups sweet potatoes, cooked and mashed
- 1 (4 5/8 ounce) package vanilla pudding mix (cook and serve large pckge)
- 12 cup sugar
- 12 cup brown sugar, packed
- 1 12 cups evaporated milk
- 4 eggs, lightly beatened
- 12 cup butter, softened
- 1 tablespoon vanilla
- 1 teaspoon ginger
- 1 teaspoon nutmeg
- 1 tablespoon cinnamon
- 2 teaspoons salt
- 3 unbaked pie shells
- Combine all ingrdients in large bowl and mix well with electric or stand mixer.
- You could sub pumpkin pie spice for the spices-when I do I use about 11/2 Tablespoons.
- Pour into the 3 pie shells-do not over fill.
- Bake at 425 degrees for 15 minutes then turn down to 350 degrees and bake for an additional 50 minutes or until a knife in the middle comes out clean.
- Ovens and times vary so keep an eye on it.
