Refreshing Mexican Salad
- 2 (15 ounce) cans black beans
- 12 medium onion, diced
- 4 celery ribs, diced
- 1 (15 ounce) can olives, sliced
- 1 avocado, sliced
- 1 carrot, sliced
- 1 head romaine lettuce, chopped
- 14 cup olive oil
- 14 cup white wine vinegar
- 12 teaspoon salt
- 12 teaspoon pepper
- 3 tablespoons dill, chopped
- Mix black beans, chopped onion, chopped celery, sliced olives, sliced avocado, sliced carrot and chopped romaine lettuce together.
- In a separate bowl mix, the olive oil, white wine vinegar, salt and pepper and pour over salad.
- Top with the chopped dill and serve.
