Broccoli and Swiss Cheese Quiche
- 1 lb broccoli
- 1 medium yellow onion, peeled and sliced
- 2 tbsp butter
- 1 9-in quiche crust, baked and cooled
- 4 eggs, beaten
- 3/4 cup cream
- 1 1/4 milk
- 1/2 lb Swiss cheese, grated into coarse pieces
- 1 salt and pepper, to taste
- Clean broccoli.
- Cut into flowerets.
- Saute onion and broccoli in the butter until tender but not soft.
- Place broccoli mix at bottom of cooked and cooled crust.
- Mix the eggs, cream, milk, salt and pepper.
- Use the custard mix to fill the quiche shell.
- Top with Swiss cheese.
- Bake at 375F for 30 to 40 minutes, until a knife inserted in the center can be removed dry.
- Cool for 10 minutes at least before cutting.
- Serve warm or at room temperature.
