Skillet Supper
- 1 lb lean ground beef
- 12 cup celery, chopped
- 12 cup onion, chopped
- 12 cup carrot, chopped
- 1 (28 ounce) can tomatoes
- 12 cup rice, uncooked
- 12 teaspoon salt
- 18 teaspoon pepper
- 12 teaspoon chili powder
- 2 tablespoons ketchup
- 1 (19 ounce) can black-eyed peas
- 1 cup cheddar cheese, grated
- Preheat oven to 350'.
- brown ground beef in oil.
- add celery, onions, and carrots.
- Cook 5 minutes, stirring constantly.
- Drain off any extra fat.
- Add remaining ingredients except cheese.
- Stir to mix.
- Put into casserole dish.
- Sprinkle cheese on top.
- Bake for 25 minutes at 350'F.
