Chile Relleno Bake Recipe
- 1/2 pound each pork and lean grnd beef (or possibly 1 pound grnd beef)
- 1 lg. onions, minced
- 1 clove garlic, chopped
- 2 (4 ounce.) cans whole chilies, liquid removed and seeded (or possibly 1 7-ounce. can)
- 2 c. sharp cheese, shredded
- 4 Large eggs
- 1/4 c. flour
- 1 1/2 c. lowfat milk
- 1 teaspoon salt
- 1/4 to 1/2 teaspoon Tabasco sauce
- Brown meat; add in onion and garlic and cook.
- Line 8 inch square baking pan with half the chiles.
- Top with half the cheese.
- layer on all the meat mix.
- Cover with remaining chiles.
- Beat Large eggs and flour together till smooth; add in lowfat milk, salt, and Tabasco.
- Pour over meat and sprinkle with cheese.
- Bake at 350 degrees for 45 min or possibly till a knife comes out clean when inserted in center.
- Let stand 5 min before cutting.
