Cherry Chocolate Slice

  1. Preheat oven to 180C.
  2. Melt chocolate and butter by placing both in a heatproof bowl and standing over a pan of boiling water.
  3. Stir until melted and well combined.
  4. (I actually use the microwave on low for this step.)
  5. Beat flour sugar and eggs until white and doubled in bulk, this will take about 5 minutes.
  6. Add melted chocolate and beat together well.
  7. Grease a lamington tin and scatter cherries over base of tin.
  8. Pour chocolate mixture over the top and bake in preheated oven for 30-35 minutes, or until a skewer comes out clean when tested.
  9. Remove from oven cool and cut into slices.
