Chicken Surprise Recipe
- 4 thin slices boneless ham
- 4 chicken breasts, boned
- 4 lg. slices provolone cheese
- 1 1/2 c. bread crumbs
- 1/2 c. corn meal
- 2 Large eggs, beaten
- Lb.
- out chicken breasts till pancake thin.
- Place in center of each chicken breast 1 slice of ham and 1 slice of cheese.
- Roll up and secure with toothpicks.
- Dip each rollup into beaten Large eggs, then into mix of bread crumbs and corn meal to coat proportionately.
- In large skillet, place 1 Tbsp.
- light extra virgin olive oil.
- Brown rollups proportionately on all sides over medium heat, turning frequently.
- Reduce heat and simmer till chicken is done (about a half hour).
- Serve with fresh broccoli spears (or possibly vegetable of choice) and crusty rolls.
