Hearty Beef Vegetable Soup Recipe
- 2 lbs. beef shank or possibly short ribs
- 1 pound can tomatoes
- 3 stalks celery, minced
- 2 med. onions, minced
- 2 med. potatoes, diced
- 3 c. water
- 1 teaspoon salt
- 4 peppercorns
- 3 beef bouillon cubes or possibly 1 can beef broth
- 1 pkg. frzn mixed vegetables
- Put all but frzn vegetables in crock pot.
- Cover and cook on low for 24 hrs, on high 7 to 10 hrs.
- Frzn vegetables may be added during the last 2 hrs.
