Shrimp Salsa
- 13 lb cooked shrimp, well drained, and cut into small pieces
- 3 chopped green onions
- 3 chopped roma tomatoes or 2 tomatoes, chopped
- 5 chopped fine radishes
- 4 teaspoons fresh lime juice
- 1 diced jalapeno
- 1 cup medium prepared salsa
- 3 -4 tablespoons chopped cilantro
- 14 teaspoon salt
- 1 dash black pepper
- 1 minced garlic clove
- 1 avocado, cut into small pieces (optional)
- Mix all of the items together, except avocado.
- Refrigerate 2 to 3 hours to blend flavors.
- Add avocado, when ready to serve.
- Otherwise the avocado breaks down into the salsa.
