Celeri Remoulade (Celeriac Salad)

  1. Blanch the celeriac by plunging into boiling water for 1 minute.
  2. Drain and cool.
  3. In a medium bowl, combine the celeriac, mayonnaise and mustard.
  4. Chill well.
  5. Serve on lettuce leaves and top with the fresh herbs.
