Celeri Remoulade (Celeriac Salad)
- 12 lb celeriac, peeled julienned
- 12 cup mayonnaise
- 1 tablespoon Dijon mustard or 1 tablespoon stone ground mustard
- 4 large lettuce leaves
- 1 tablespoon fresh parsley, minced (garnish)
- 1 tablespoon fresh dill, minced (garnish)
- Blanch the celeriac by plunging into boiling water for 1 minute.
- Drain and cool.
- In a medium bowl, combine the celeriac, mayonnaise and mustard.
- Chill well.
- Serve on lettuce leaves and top with the fresh herbs.
