Mediterranean Pasta Salad
- 300g rigatoni pasta
- 1 punnet cherry tomatoes, halved Safeway 1 lb For $1.29 thru 02/09
- 400g can artichoke hearts, drained and halved
- 100g thinly sliced salami
- 1/2 cup cherry bocconcini, halved
- 1/3 cup KRAFT Balsamic Italian Dressing
- 1/4 cup flat-leaf parsley leaves
- 1/4 cup pine nuts, toasted
- Cook pasta in a large saucepan of boiling water until tender.
- Drain and cool slightly.
- Combine pasta, tomatoes, artichokes, salami, bocconcini, dressing and parsley in a large bowl.
- Arrange salad onto serving plates and top with pinenuts.
- Serve.
