Miniature Meat Loaves
- 1 Tablespoon Olive Oil
- 1 whole Yellow Onion, Chopped
- 2 cloves Garlic, Minced
- 1 pound Lean Ground Beef
- 1 cup Italian Seasoned Bread Crumbs
- 1/4 cups Parmesan Cheese, Grated
- 1 whole Egg
- 2- 1/2 Tablespoons Sauce (see Below)
- Salt And Pepper, to taste
- 3/4 cups Ketchup
- 1 Tablespoon Worcestershire Sauce
- 1.
- Preheat the oven to 350 degrees F. Line a sheet pan with parchment paper (or tin foil).
- 2.
- In a medium-sized skillet, drizzle about a tablespoon (depending on the size of your onion) of olive oil.
- Heat to medium heat, then add the chopped onion.
- Saute until soft, then add in the minced garlic and continue to cook 1-2 minutes.
- Set aside to cool.

- In a small bowl, combine the ketchup and Worcestershire sauce to make the sauce.
- Set side.

- In a medium-sized bowl, combine the ground beef, bread crumbs, cheese, egg, sauteed onions and garlic, 2 1/2 tablespoons of sauce, salt and pepper to taste.
- Using your hands, fold the mixture to combine, taking care not to overwork it.
- 5.
- Mold the mixture into 4-5 miniature-shaped loaves on the lined sheet pan.
- With the back of a spoon, make a little indention or well, in the center of each loaf.
- (This will be to hold extra sauce!)
- 6.
- Bake in a 350 degrees F oven for 30 minutes then pull out and spoon sauce into the center of each loaf.
- Place back in the oven and bake for an additional 10-15 minutes.
- 7.
- Garnish with a little bit of chopped fresh parsley to serve (optional).
