Cuban Black Beans And Rice Recipe

  1. Soak beans in 4 c. of water overnight, after washing them thoroughly.
  2. Keep the water for cooking and add in 4 more c. of water.
  3. Fry slightly the onions, green peppers and garlic in extra virgin olive oil.
  4. Combine all ingredients except vinegar.
  5. Cook on stove with low heat till beans are tender and the liquid has thickened.
  6. Takes 3-5 hrs.
  7. Serve over rice with vinegar and raw minced onions.
