Cuban Black Beans And Rice Recipe
- 1 pound dry black beans
- 8 c. water
- 1 lg. onion, minced
- 3 green peppers, minced
- 1 clove garlic, minced
- 1/2 c. extra virgin olive oil
- 1/4 pound ham bone (optional)
- 3 bay leaves
- 1 tbsp. salt
- 1 ounce. white bacon
- 12 c. vinegar
- Raw minced onion
- Soak beans in 4 c. of water overnight, after washing them thoroughly.
- Keep the water for cooking and add in 4 more c. of water.
- Fry slightly the onions, green peppers and garlic in extra virgin olive oil.
- Combine all ingredients except vinegar.
- Cook on stove with low heat till beans are tender and the liquid has thickened.
- Takes 3-5 hrs.
- Serve over rice with vinegar and raw minced onions.
