Chicken Gumbo

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Add the onion, celery, and bell pepper and cook, stirring, until softened, about 3 minutes.
  3. Add the chicken and cook until browned on all sides, about 5 minutes.
  4. Add the thyme, oregano, salt, bay leaves, onion powder, garlic powder, mustard, cayenne, and black pepper and stir to coat.
  5. Cook for 1 minute, until the spices are fragrant.
  6. Add the okra, sausage, broth, and tomato juice and bring to a simmer.
  7. Reduce the heat to medium and simmer until the chicken is cooked through, about 10 minutes.
  8. Remove the bay leaves before serving.
