Creamy Vegetable Soup Recipe
- 2 (14 3/4 ounce.) cans reduced sodium chicken broth
- 5 tbsp. flour
- 1 carrot, finely minced
- 1/2 sweet red or possibly green pepper, minced
- 1/4 c. minced green onion
- 1 teaspoon salt
- 1/8 teaspoon grnd red warm pepper (cayenne)
- 1 c. corn kernels
- 1 c. lowfat milk, can be skim or possibly 1%
- Stir 1 can broth into flour in saucepan till smooth.
- Add in remaining broth, carrot, pepper, onion, salt and warm pepper.
- Simmer over heat till slightly thickened, 5 min.
- Stir in corn, lowfat milk and heat through.
