Churned Passion Fruit with Mango Fritters, Honey Crisp and Garam Masala

  1. Drizzle the passion fruit sauce evenly among 4 plates.
  2. Place 1 scoop of ice cream on top of the sauce.
  3. Garnish the ice cream with a shard of Honey Crisp.
  4. Arrange the Mango Fritters next to the ice cream.
  5. Serve each plate with a small dish of Garam Masala Sugar.
  6. Honey Crisp:
  7. 4 ounces salted butter
  8. 4 ounces brown sugar
  9. 1/4 cup clover honey
  10. 3 ounces all-purpose flour
  11. Preheat oven to 325 degrees F.
  12. In a medium saucepan, melt the butter, sugar and honey over medium heat.
  13. Whisk in the flour until smooth.
  14. Set aside to cool.
  15. Once cooled, spread the mixture into a thin, even layer on a nonstick baking mat.
  16. Bake for 8 to 10 minutes.
  17. Allow to cool and break into shards.
  18. Canola oil for deep frying
  19. 1/2 cup all-purpose flour, plus extra for rolling
  20. 5 ounces soda water
  21. 2 large mangoes, peeled and cut into 1-inch slices
  22. Powdered sugar for dusting
  23. Heat oil to 350 degrees F.
  24. Place the flour in a medium bowl and create a well in the center.
  25. Pour the soda water into the well and mix to combine.
  26. Roll the mango slices in the extra all purpose flour, shaking off any excess.
  27. Then, dip the slices into the batter and fry in 350 degrees F oil until golden brown.
  28. Remove from the oil and drain on paper towels.
  29. Dust with powdered sugar.
  30. Garam Masala Sugar
  31. 1/4 cup sugar
  32. 1/4 teaspoon ground coriander
  33. 1/8 teaspoon ground cumin
  34. 1/2 teaspoon chili powder
  35. 1/8 teaspoon cinnamon powder
  36. 1/2 teaspoon ground ginger
  37. 1/8 teaspoon ground clove
  38. 1/2 teaspoon salt
  39. In a small bowl, combine all the ingredients.
  40. Mix well.
