Banana Nut Cake
- 3 c. all-purpose flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 4 eggs (lightly beaten)
- 1-1/3 c. vegetable oil
- 1 1/2 tsp. vanilla extract
- 1 can (8oz.) crushed pineapple (undrained)
- 2 c. mashed ripe bananas
- 1 1/2 c. chopped walnuts
- Confectioners' sugar
- In a mixing bowl, combine dry ingredients.
- Beat in eggs, oil and vanilla.
- Fold in pineapple, bananas and nuts.
- Pour into well-greased 10-inch tube pan.
- Bake at 350u0b0F. for 60 to 65 minutes or until cake test done.
- Cool in pan 15 minutes before removing to a wire rack.
- When completely cooled, dust with confectioners' sugar.
