Sauteed-Chanterelle Salad

  1. Using a soft brush, gently remove any dirt from the chanterelles without washing the mushrooms.
  2. In a large heavy skillet, melt the butter over medium heat; add shallot and cook 1 minute.
  3. Add mushrooms and saute until they are lightly browned but are still firm -- 3 to 5 minutes.
  4. Stir in pepper and salt.
  5. Transfer mushrooms to a platter.
  6. Sprinkle with chives and serve.
