Sauteed-Chanterelle Salad
- 3 c. fresh chanterelle mushrooms
- 1 1/2 tbsp. unsalted butter
- 1 tbsp. finely minced shallot
- 1/4 tsp. ground black pepper
- 1/4 tsp. salt
- 1 tbsp. chopped fresh chives
- Using a soft brush, gently remove any dirt from the chanterelles without washing the mushrooms.
- In a large heavy skillet, melt the butter over medium heat; add shallot and cook 1 minute.
- Add mushrooms and saute until they are lightly browned but are still firm -- 3 to 5 minutes.
- Stir in pepper and salt.
- Transfer mushrooms to a platter.
- Sprinkle with chives and serve.
