Pork Burgers
- 1 pound lean ground pork
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped green peppers
- 1 teaspoon chopped garlic
- 1 tablespoon Creole mustard or similar mustard
- Essence, recipe follows
- 4 onion buns
- 4 slices of red onion
- 4 slices Muenster
- Potato chips, for garnish
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried leaf oregano
- 1 tablespoon dried thyme
- Preheat grill or broiler.
- In a bowl combine pork, onions, peppers, garlic, Creole mustard, and Creole spice.
- Form four equal patties, press them, about 1/2-inch thick.
- Place on the grill or under the broiler and cook for 6 to 8 minutes on each side.
- Toss the bun on the grill or under the broiler to toast it.
- Assemble the sandwich with the onions and cheese.
- Garnish with a handful of potato chips.
- Combine all ingredients thoroughly.
- Yield: 2/3 cup
