AMIEs PASTA with Sausage & Spicy Tomatoe Sauce
- 3 tbsp olive oil
- 1 medium onion, sliced
- 3 clove garlic, finely chopped
- 1/2 cup red wine
- 2 dried red chillies, crumbled
- 1 salt and freshly ground black pepper
- 4 sausages, casings removed and meat crumbled
- 2 can 400 grams can whole peeled tomatoes, chopped
- 1000 grams pasta (penne or maniche)
- Bring a large pot of water to a boil.
- Add a tablespoon of salt and a splash of oil.
- Cook the pasta according to the packet directions, until al dente.
- Drain and return to the pan.
- Heat the oil in a medium, heavy-based sauce pan over low-medium heat.
- Add the onion and garlic, and saute until softened.
- Increase the heat to medium.
- Add the sausage meat, stirring to break up, and cook for 10 minutes, until browned.
- Pour in the wine and cook until reduced by half.
- Add the tomato and chilli, and bring to a boil.
- Decrease the heat to low and gently simmer for 15-20 minutes, until flavours have developed.
- Season with salt and pepper.
- Add to the pasta and toss to combine.
- Serves hot.
