Cream of Broccoli and Cheddar Soup

  1. Clean broccoli, chop florets and thinly slice stems.
  2. In a medium-size saucepan, combine broccoli and chicken broth; heat to a boil.
  3. Reduce heat and simmer for 7 minutes, or until broccoli is fork tender.
  4. Transfer, one third at a time to a food processor.
  5. Process until fairly smooth.
  6. In the same saucepan, melt butter over medium heat, add flour.
  7. Cook, stirring constantly until bubbly.
  8. Add milk and pepper; heat to a boil, stirring constantly.
  9. Reduce heat to medium and add the broccoli puree.
  10. Stir in cheese until the cheese melts (do not boil), stirring constantly.
