Cranberry Chutney
- 2 tablespoons oil
- 1 onion, diced
- 3 garlic cloves, chopped
- 4 cups cranberries (1 package)
- 12 cup dried cranberries (or other)
- 12 cup dark brown sugar
- 1 12 cups cranberry juice
- 14 cup balsamic vinegar
- 14 cup port wine
- 1 teaspoon salt
- 1 teaspoon pepper
- 12 teaspoon allspice
- 1 cinnamon stick
- 1 slice fresh ginger (nickel sized slice)
- 2 cloves
- saute the onion in the olive oil.
- when they are golden brown, add the garlic and saute for another 2 minutes-ish.
- Don't let it burn!
- It doesn't taste good then and you'll have to start over.
- Add in the rest of the ingredients and simmer until thick.
- You can store it in your fridge for a few weeks or in your freezer for a few months.
