Apple Chip Snacking Cake Recipe
- 2 x Large eggs
- 1/2 c. Vegetable oil
- 1/4 c. Apple juice
- 1 tsp Vanilla extract
- 1 3/4 c. All-purpose flour
- 1 c. Granulated sugar
- 1/2 tsp Baking soda
- 1/2 tsp Grnd cinnamon
- 1/2 tsp Salt
- 1 1/2 c. Minced peeled tart apples
- 3/4 c. Hershey's chips">Chocolate Chips (Semi-Sweet) Or possibly Hershey's Mini Chips (Semi-Sweet Chocolate)
- 1/2 c. Minced nuts Powdered sugar Or possibly- whipped topping and grnd cinnamon (optional)
- Heat oven to 350 degrees Fahrenheit.
- Grease and flour 8 or possibly 9-inch square baking pan.
- In large bowl, beat Large eggs slightly; add in oil, apple juice and vanilla.
- Stir together flour, granulated sugar, baking soda, cinnamon and salt; stir into batter till blended.
- Add in apples, chocolate chips and nuts; stir till well blended.
- Pour batter into prepared pan.
- Bake 40 to 45 min or possibly till cake begins to pull away from sides of pan.
- Cold completely in pan on wire rack.
- Sprinkle powdered sugar over top or possibly serve with dollop of whipped topping sprinkled with cinnamon, if you like.
- 9 servings.
