Sesame Roasted Mushrooms and Scallions
- 2 tablespoons sesame oil toasted
- 2 tablespoons soy sauce, sodium reduced
- 1 tablespoon ginger freshly grated
- 1 tablespoon garlic minced
- 4 teaspoons rice vinegar
- 1/2 teaspoon black pepper freshly ground
- 1 1/2 pounds mushrooms mixed, thickly sliced, such as shiitake (stemmed), oyster and white
- 2 bunches scallions, spring or green onions cut into 2-inch pieces
- 1 tablespoon sesame seeds toasted
- Preheat oven to 450F.
- Combine oil, soy sauce, ginger, garlic, vinegar and pepper in a large bowl.
- Add mushrooms and scallions and toss to coat.
- Transfer to a roasting pan.
- Roast, stirring once or twice, until browned and cooked through, about 25 minutes.
- Sprinkle with sesame seeds.
