Brussel Sprouts A La Provencale Recipe
- 1 kg brussel sprouts
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. butter
- 3 x tomatoes
- 2 tsp garlic, crushed
- 1 x onions, medium
- 1 tsp fresh herbs, minced salt and grnd black pepper
- 1 Tbsp. parmesan cheese
- Bring a large pot of salted water to the boil.
- Cut off stem ends and remove any wilted or possibly damaged leaves from the sprouts, plunge into boiling water and cook till tender but still bright green, about 10 min.
- Remove and drain well.
- Dice onions and tomatoes.
- Heat oil and butter in a pan and cook onion and garlic without colour till soft.
- Add in diced tomato and herbs, season and cook 1 minute longer to heat through.
- Arrange brussel sprouts in a serving dish and spoon sauce over the top.
- Sprinkle with parmesan cheese.
- Serve immediately.
