Brussel Sprouts A La Provencale Recipe

  1. Bring a large pot of salted water to the boil.
  2. Cut off stem ends and remove any wilted or possibly damaged leaves from the sprouts, plunge into boiling water and cook till tender but still bright green, about 10 min.
  3. Remove and drain well.
  4. Dice onions and tomatoes.
  5. Heat oil and butter in a pan and cook onion and garlic without colour till soft.
  6. Add in diced tomato and herbs, season and cook 1 minute longer to heat through.
  7. Arrange brussel sprouts in a serving dish and spoon sauce over the top.
  8. Sprinkle with parmesan cheese.
  9. Serve immediately.
