Chocolate Marble Vanilla Cheesecake

  1. Preheat oven to 350F (180C).
  2. Crust: In a bowl, combine crumbs, water and margarine; mix well.
  3. Press onto sides and bottom of springform pan; refrigerate.
  4. In a food processor, combine ricotta and cottage cheeses, sugar and eggs; process until completely smooth.
  5. Add flour, sour cream and vanilla; process until well combined.
  6. Pour into pan.
  7. Melt chocolate with water and stir until smooth.
  8. Spoon onto cake in several places and swirl through lightly with a knife.
  9. Bake for 65 minutes or until set around edge but still slightly loose in center.
  10. Let cool; refrigerate until well chilled.
