Sweet Potato Spice Bread
- 13 cup molasses
- 23 cup honey
- 23 cup sweet potatoes, or yams mashed
- 13 cup vegetable oil
- 2 large eggs beaten
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon salt
- 1/4 teaspoon mace
- 1 teaspoon ginger freshly grated
- 1 cup whole wheat flour
- 1 cup flour, all-purpose
- 1 tablespoon baking powder
- 1 cup walnuts or pecans, chopped
- Preheat oven to 325F (160C).
- Oil a 9" x 5" x 3" loaf pan.
- In a large bowl, blend molasses, honey, sweet potatoes, oil and eggs.
- In a small bowl, combine remaining ingredients.
- Add to potato mixture and stir untill well mixed.
- Spoon batter into loaf pan and bake until a toothpick inserted in middle comes out clean, about one hour.
- Turn out onto a wire rack to cool before slicing.
- Hint: Serve it with nonfat cream cheese.
