Tom'S Fried Catfish
- salt water
- milk
- 3/4 c. yellow cornmeal
- 1/4 c. flour
- 2 tsp. salt
- 1 tsp. cayenne pepper
- 1/4 tsp. garlic powder
- 4 catfish fillets or 2 lb. catfish nuggets
- canola oil
- Fill the kitchen sink with cool water; add about 2 to 3 tablespoons salt and swish around.
- Place catfish in water for approximately 30 minutes.
- Remove fish from water, rinse and place in large bowl of milk.
- Combine cornmeal, flour, salt, cayenne pepper and garlic powder.
- Dredge catfish with mixture, shaking off excess.
- Fill deep skillet half full with canola oil.
- Heat to 350u0b0.
- Add catfish in a single layer and fry until golden brown, 5 to 6 minutes, depending on size.
- Remove and drain on paper towels.
- Makes 4 servings.
