Tom'S Fried Catfish

  1. Fill the kitchen sink with cool water; add about 2 to 3 tablespoons salt and swish around.
  2. Place catfish in water for approximately 30 minutes.
  3. Remove fish from water, rinse and place in large bowl of milk.
  4. Combine cornmeal, flour, salt, cayenne pepper and garlic powder.
  5. Dredge catfish with mixture, shaking off excess.
  6. Fill deep skillet half full with canola oil.
  7. Heat to 350u0b0.
  8. Add catfish in a single layer and fry until golden brown, 5 to 6 minutes, depending on size.
  9. Remove and drain on paper towels.
  10. Makes 4 servings.
