Baked Potato Bites
- 6 whole Medium Russet Potatoes, Baked
- 2 Tablespoons Olive Oil
- 2 teaspoons Salt
- 1/4 cups Reduced Fat Shredded Cheddar Cheese
- 1 package (1 Oz. Packet) Ranch Dressing Mix
- 1 cup Low Fat Sour Cream
- 4 slices Lean Bacon, Cooked (microwave) And Crumbled
- Preheat oven to 450 degrees.
- Allow baked potatoes to cool for approximately 15 minutes.
- Quarter potatoes (slice lengthwise and then crosswise).
- Place potato quarters on a baking sheet and brush with olive oil.
- Sprinkle lightly with salt and then sprinkle with cheese.
- Place quarters in the oven for about 10 minutes, or until cheese is melted.
- Mix ranch dressing mix into sour cream.
- Remove potatoes from the oven and top with about 1 tablespoon of sour cream and sprinkle lightly with bacon.
