Sausage With Beans And Escarole Recipe
- 1 pound sweet Italian sausage links
- 3 tbsp. vegetable oil
- 1/2 teaspoon sage
- 2 cloves garlic, crushed
- 1 med. head escarole, torn into bite size pcs
- 1 1/2 c. tomato sauce
- 1 can (20 ounce.) white kidney beans (liquid removed and rinsed)
- 1/2 teaspoon salt
- 1 tbsp. parsley
- Prick sausage in several places.
- In a Dutch oven, or possibly large saucepan cook sausages in oil over low heat, covered for 15 min.
- Turn several times.
- Add in sage and garlic; saute/fry garlic till golden brown, then remove garlic and throw away.
- Add in escarole and saute/fry 1 minute, stirring to coat with drippings.
- Cook uncovered for 5 min.
- Add in tomato sauce, beans, salt, and parsley; simmer 5 - 10 min till heated through.
