Sausage With Beans And Escarole Recipe

  1. Prick sausage in several places.
  2. In a Dutch oven, or possibly large saucepan cook sausages in oil over low heat, covered for 15 min.
  3. Turn several times.
  4. Add in sage and garlic; saute/fry garlic till golden brown, then remove garlic and throw away.
  5. Add in escarole and saute/fry 1 minute, stirring to coat with drippings.
  6. Cook uncovered for 5 min.
  7. Add in tomato sauce, beans, salt, and parsley; simmer 5 - 10 min till heated through.
