Parsley Pasta with Sauteed Artichokes
- 12 oz. whole-wheat penne
- 2 tbsp. olive oil
- 4 clove garlic
- 1 red chili
- 1 anchovy fillet
- 1 package frozen artichokes
- 1/2 c. dry white wine
- 2 tsp. lemon zest
- 2 tbsp. lemon juice
- 1 bunch fresh flat-leaf parsley
- 2 tbsp. grated Parmesan
- Cook the penne according to package directions.
- Meanwhile, in a large nonstick skillet, heat the oil over medium heat.
- Add the garlic, chili, and anchovy (if using) and cook, stirring, until the garlic is tender and beginning to brown, 1 to 2 minutes.
- Add the artichokes to the pan, increase the heat to medium-high and cook, tossing occasionally, until golden brown, about 3 minutes.
- Add the wine, lemon zest, and juice and simmer for 2 minutes.
- Stir in the parsley and cook for 1 minute.
- Toss the artichoke mixture with the pasta and top with the Parmesan.
