Spinach and Mushroom with Shiro-dashi and Wasabi

  1. Rinse the spinach, drain excess water, then chop into bite-sized pieces.
  2. Chop off the stem ends of the mushrooms, then shred into bite-sized pieces.
  3. Place the spinach in a heat-resistant dish, then microwave for 2 minutes at 500 W. Soak in water to remove bitterness, then drain excess water.
  4. Microwave the mushrooms for 2 minutes, then blot away excess moisture with a paper towel, if necessary.
  5. While it is still hot, add the seasonings, then mix.
  6. Transfer to a dish, and it's ready to serve.
