Southwestern Buffalo and Bean Burger Wraps

  1. Position oven rack in upper third of oven; preheat broiler.
  2. Coat a broiler pan with cooking spray.
  3. Gently combine ground buffalo, beans, cilantro, taco seasoning and jalapenos in a medium bowl (do not over-mix).
  4. Shape into four 5x2-inch oblong patties and place on the prepared broiler pan.
  5. Broil the patties until an instant-read thermometer inserted into the center reads 165F, about 12 to 14 minutes.
  6. Meanwhile, mash together avocado, salsa and garlic in a small bowl.
  7. Place warmed tortillas on a clean work surface.
  8. Spread each with the guacamole mix, then sprinkle with lettuce and cheese.
  9. Top each with a burger and roll into a wrap.
  10. Serve immediately, with lime wedges.
  11. TO WARM TORTILLAS:.
  12. Wrap in foil; bake at 300F until steaming, about 5 minutes.
  13. Or wrap in barely damp paper towels and microwave on HIGH for 30 to 45 seconds.
