Sauteed Chicken with Yellow Grape Tomatoes

  1. Heat olive oil in heavy medium skillet over medium-high heat.
  2. Sprinkle chicken with salt and pepper; add to skillet.
  3. Saute chicken until cooked through, about 5 minutes per side.
  4. Transfer chicken to 2 plates.
  5. Add tomatoes and garlic to skillet; saute 1 minute.
  6. Add balsamic vinegar and 1 tablespoon basil; saute 30 seconds.
  7. Season sauce to taste with salt and pepper.
  8. Spoon sauce over chicken.
  9. Sprinkle with remaining 1 tablespoon basil and serve.
