Lemon Spinach Pasta
- 8 ounces egg noodles
- 2 tablespoons olive oil
- 1 lb spinach, fresh, stems removed
- 14 cup lemon juice, fresh
- 14 teaspoon salt
- 14 teaspoon red pepper flakes
- 4 tablespoons parmesan cheese, grated
- Boil pasta as directed on package.
- In the meantime, heat olive oil in large pan.
- Add spinach and cook until wilted (about 2 minutes) - stirring all the while.
- Add lemon juice, salt and red pepper flakes and stir again.
- Stir in noodles.
- Toss with Parmesan cheese and serve.
- (about 1 1/2 Celsius per serving).
