Andrea Parket's Stuffed Mushrooms Recipe
- 4 x Portobello mushrooms, stems removed
- 1 c. Package stuffings Extra virgin extra virgin olive oil
- 1 c. Tomato sauce
- 1/2 c. Chicken stock
- 1 Tbsp. Minced fresh parsley
- 2 x Cloves garlic, chopped
- 1/2 c. Pecorino Romano cheese, freshly grated
- 1 Tbsp. Italian bread crumbs
- Preheat oven to 500 F. Fill mushroom caps with stuffing and oil.
- In a mixing bowl, combine tomato saue, chicken stock, parsley and garlic.
- Pour mix into shallow baking dish.
- Place mushroom in dish and sprinkle tops with cheese and bread crumbs.
- Bake 15 min, remove from sauce (some will be absorbed by mushrooms).
- Serves 4.
