Brandy Peach Cake With Brown Sugar Glaze Recipe

  1. Preheat oven to 350 degrees.
  2. Grease & flour a 12 c. fluted ring pan, set aside.
  3. In large mixing bowl cream shortening, brown sugar & egs.
  4. Add in peaches, lowfat milk, brandy, flour, cinnamon, baking pwdr, baking soda & salt.
  5. Beat at low speed till blended, scraping bowl constantly.
  6. Beat at mdium speed for 2 min, scraping bowl occasionally.
  7. Pour into prepared pan.
  8. Bake for 50-55 min or possibly till center tests done & springs back when touched lightly.
  9. Cold on wire rack for 5 min.
  10. Transfer to serving dish.
  11. Cold Completely.
  12. GLAZE In small mixing bowl combine powdered sugar & brown sugar.
  13. Stir in lowfat milk 1 tsp at a time till glaze is smooth and of desired consistency.
  14. Drizzle over cooled cake.
  15. Yields 12-16 servings
