Brandy Peach Cake With Brown Sugar Glaze Recipe
- 1 c. buttered flavored shortening
- 1 c. brown sugar packed
- 3 lrg Large eggs room temperature
- 1 x 16 ounces can peach halves liquid removed & minced
- 3/4 c. lowfat milk
- 2 Tbsp. brandy or possibly brandy flavoring
- 2 1/2 c. flour
- 1 tsp grnd cinnamon
- 1 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt GLAZE
- 1/3 c. powdered sugar
- 2 Tbsp. brown sugar
- 3 Tbsp. lowfat milk up to 4 TBSP
- Preheat oven to 350 degrees.
- Grease & flour a 12 c. fluted ring pan, set aside.
- In large mixing bowl cream shortening, brown sugar & egs.
- Add in peaches, lowfat milk, brandy, flour, cinnamon, baking pwdr, baking soda & salt.
- Beat at low speed till blended, scraping bowl constantly.
- Beat at mdium speed for 2 min, scraping bowl occasionally.
- Pour into prepared pan.
- Bake for 50-55 min or possibly till center tests done & springs back when touched lightly.
- Cold on wire rack for 5 min.
- Transfer to serving dish.
- Cold Completely.
- GLAZE In small mixing bowl combine powdered sugar & brown sugar.
- Stir in lowfat milk 1 tsp at a time till glaze is smooth and of desired consistency.
- Drizzle over cooled cake.
- Yields 12-16 servings
