Deep Dish Chicago Style Pizza Recipe
- 1/2 pound sweet Italian sausage
- 1 lg. green or possibly red pepper (2 x 1/4 inch strips)
- 1 med. onion, thin sliced
- 1 tbsp. extra virgin olive oil
- 1 clove garlic, chopped
- 2 tbsp. thin pepperoni, thin strips
- 1/4 pound mushrooms, sliced
- 1 teaspoon basil, crumbled
- 1 teaspoon oregano, crumbled
- 1/4 teaspoon pepper
- 1 tube refrigerated pizza crust
- 1/2 c. pizza sauce
- 2 tbsp. Parmesan cheese
- 1 pkg. (8 ounce.) shredded Mozzarella

- Preheat oven to warm (425 degrees).

- Remove casings from sausage, crumble into large heavy skillet.
- Cook over medium heat, stirring often for 5 min, or possibly till meat isn't pink.
- Reserve to plate lined with paper towels.
- Throw away fat.

- Saute/fry peppers and onions in extra virgin olive oil in same skillet over medium heat, 5 min, stirring occasionally.
- Add in garlic, cook 1 minute.
- Add in mushrooms, pepperoni, basil, oregano and black pepper.
- Cook 2-3 min.
- If too dry, add in 1-2 Tbsp.

- Unroll pizza dough - place in well seasoned 9-10 inch cast iron skillet, stretching dough slightly to fit up sides about 1 inch.
- Roll 4 pointed corners inward slightly.
- Spread dough with 2 Tbsp.
- pizza sauce.
- Spread 1/2 vegetable mix over sauce.
- Top with half the sausage.
- Sprinkle 1 Tbsp.
- Parmesan cheese.
- Dot with 3 Tbsp.
- sauce, put 1/2 the Mozzarella.
- Repeat layers.
