Sweet 'N Sour Baked Chicken
- 1/4 c. butter
- 1/2 c. chopped onion
- 1/2 c. coarsely chopped green pepper
- 1/2 c. coarsely chopped carrots
- 3/4 c. ketchup
- 2 Tbsp. vinegar
- 1/4 c. firmly packed brown sugar
- dash of red pepper
- ground ginger
- 1 Tbsp. soy sauce
- 1/2 tsp. garlic salt
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. pineapple chunks, drained
- 1 c. pineapple juice
- 1 (3 lb.) chicken, cut up
- Preheat oven to

- skillet heat butter until melted.
- Add onion,
- greenteppertnd carrots.
- Cook 5 minutes, stirring.
- Stir in ketchup, pineapple juice, vinegar, sugar, soy sauce, garlic salt, salt, pepper and ginger.
- Cook, stirring constantlytntil

- pineapple. Arrange chicken int3 x 9-inch baking dish.
- Pour sauce over. Bake 45 minutes.
- Uncover;take
- 30
- minutes longer or until done.
